Homemade Pav Bhaji Masala Powder (Spice Mix) is a unique spice blend that we use to make Mumbai’s famous Pav bhaji. The strong flavor of the masala powder elevates the dish, giving it a delightful tantalizing taste to the dish.
India is famed for its street food, which everyone likes because of the incredible range of flavors and varieties available. We add this spice blend to Mumbai’s most popular street food pav bhaji, tawa pulao, and misal pav to get the alluring flavor and taste.
It is usually made of mashed vegetables, masala powder with butter, and is served with special bread. It is the most essential element, we can easily make it at home with ingredients that are readily available.
There are many varieties of powders available in the market, and each one tastes different. Although the basic ingredients for making it is the same, the proportion of each item added varies. But nothing beats a homemade one, because what we prepare at home is always the best.
We prefer to make all the masala powders at home like Garam masala, Biryani masala, Bisi bele bath, Puliogere, Vangi bath, Rasam, and Sambar powders.
This dish is a blend of red chilies, star anise, cloves, dry ginger, cinnamon, cumin, pepper, fennel seeds, coriander seeds, and little nutmeg with Dry mango powder, salt, and Turmeric. When stored in an airtight container, it will last for 5-6 months.
This classic Mumbai Pav bhaji masala powder goes great in street foods like Pav bhaji, misal pav, tawa pulao, and so on.
How to make Homemade Pav Bhaji Masala Powder
- Dry roast 10 red chilies, 4 byadagi chilies, 2 star anise, 10 cloves, 1 inch dry ginger, and 2 inch cinnamon in a heavy-bottomed pan for 2-3 minutes, or until aromatic. Keep tossing constantly so that the spices do not burn. Place the spices on a plate to cool before blending.

2. In the same pan, dry roast 2 tsp pepper, 2 tbsp coriander seeds, 2 tsp fennel seeds, 2 tbsp cumin, and half nutmeg for 2 minutes on medium flame until fragrant. Stir continuously. Transfer and spread the spices to a plate and cool them.

3. Combine all of the ingredients and blend until the mixture is finely ground.

4. Add 1/2 tsp turmeric, 1tsp amchur, or dried mango powder, blend it finely. Store it in an air-tight container.

Ingredients
- 10 Red chilies

- 2 Star anise
- 8-10 Cloves
- 1 inch Dry ginger
- 2 inch Cinnamon
- 2 tsp Pepper
- 2 tbsp Coriander seeds
- 2 tsp Saunf / Fennel seeds
- 2 tbsp Cumin
- ½ Nutmeg
- ½ tsp Turmeric Powder
- 1 tsp Amchur Powder / Dry Mango Powder
Instructions

- Combine all of the ingredients and blend until the mixture is finely ground.
- Add turmeric, amchur powder, or dried mango powder and blend until everything is finely ground.
- Store it in an air-tight container.
