Quick Mango Pudding without Gelatin/Agar-Agar is a rich and creamy, smooth, and delectable mango dessert packed with the flavors. This recipe is vegetarian, simple to make, and requires only a few ingredients with no baking.

It is light, firm, silky smooth, and velvety in texture, which melts in one’s mouth. This is generally made with fresh ripened mangoes for the rich taste, although it may also be made using canned or frozen ones.

This recipe does not require gelatin or agar-agar and instead relies on corn starch. This luscious dessert recipe requires only 5 ingredients and takes less than 15 minutes to prepare.

By substituting coconut milk for full-fat milk, you can make this vegan.

Fresh, completely riped ones that are sweet enough give it a scrumptious flavor. No additional flavorings are required; however, kewra water, vanilla essence, or cardamom can be used.

Clean, peel, and slice the mangoes. Next, blend them into a smooth paste with milk and sugar. Meanwhile, prepare cornstarch by combining cornflour and milk. Cook the pureed mixture until it thickens and comes to a boil. Add the cornstarch and whisk constantly to avoid lumps. When it thickens and coats the spatula, pour into the greased molds/cups and chill for 2 hours for it to set. Serve it cold

How to make Mango pudding

  1. Rinse and peel 2 medium-sized mangoes. Chop and put them in a blender

2. Add ¼th cup of sugar and 1 cup of milk to the blender and process until smooth.

3. Transfer the mixture to a saucepan and heat it over medium heat until it reaches a boil.

4. Meanwhile, make a slurry by combining ¼th cup of cornflour and ¼th cup of milk

5. When it comes to a boil, lower the flame and add the cornflour slurry. keep stirring to avoid lumps.

6. Stir vigorously for 4 to 5 minutes over a low flame to achieve a smooth paste.

7. Turn off the flame, when it thickens and coats the spatula.

8. Squeeze half of the lemon juice and mix.

9. Pour into greased tins or cups. Tap the molds to eliminate the air bubbles.

10. Cool them to room temperate and then refrigerate for 2 hours.

11. Serve it cold; it tastes best when chilled.

  • When the mixture thickens and coats the spatula, the flame must be turned off.
  • Half of the lemon juice is squeezed and mixed in.
  • Pour the mixture into greased tins or cups. Tap the molds to eliminate the air bubbles.
  • Cool the mixture to room temperate and then refrigerate for 2 hours.
  • Serve it cold; it tastes best when chilled.

Notes

  1. Choose fresh, completely ripe mangoes that are sweet enough to make pudding.
  2. Pour in the cornstarch mixture after fully mixing it with the milk.
  3. To avoid lumps and achieve a smooth consistency, thoroughly stir/whisk the mixture after adding corn starch.
  4. After pouring the mango mixture into the cups, tap the cups to remove any air bubbles that have developed.
  5. Allow the mixture to thoroughly set in the refrigerator for 2 hours.
