Tawa Pulao | Mumbai Style Tawa Pulao | How to make Tawa Pulao is an appetizing, delectable, and well-known Mumbai street food. This is a spicy, tangy, and rich rice dish flavored with pav bhaji masala and sautéed vegetables.

The main ingredient is Pav bhaji masala powder. This is a unique spice blend that adds an enticing flavor to this dish, making it incredibly delicious and lip-smacking.

It is a rice dish that we cook with a lot of vegetables and pav bhaji masala. This is a popular street food that they generally prepare using leftover masala and tossed with boiled rice on high flame.

As the name implies, it is a pulao cooked on a tawa; which is a flat pan that we use for shallow frying or preparing chapatis.

The street vendors use a huge one, where they first prepare a significant quantity of gravy by sauteeing veggies with masala powder and keeping it on one side of the flat pan. When the orders come in, they toss a required amount of cooked rice with the vegetable masala and serve it.

By using more veggies and fewer spices, we can make it more nutritious and wholesome. We can prepare this dish using vegetables such as onion, tomatoes, potatoes, capsicum, carrots, sweet corn, peas, and so on.

If we have leftover rice, this recipe is very simple and a quick one to prepare. To begin, we must sauté the vegetables over high heat until they cook properly.

Then, add masala powder, chili powder, and turmeric and saute till they get fragrant. Finally, mix it with rice and garnish with coriander. We can make this at home using a Kadai or any pan.

How to make Mumbai style tawa pulao

  1. Heat 2 tbsp ghee in a tawa or pan and add 1/2 tsp cumin, allow it to sizzle.

2. Now, add 1 finely chopped onion and caramelize it for a minute.

3. Add 1 tsp grated ginger and 1 tsp grated garlic and sauté until the raw scent is gone.

4. Then add 6-8 diced beans,1 carrot, 1 capsicum, and 1/4th cup peas, close the lid, and simmer for 5 minutes, or until the vegetables are cooked perfectly.

5. Now, add 2 medium-sized chopped tomatoes, 1/4th cup sweet corn, and 2 medium-sized boiled and chopped potatoes; Cook for a further 2 minutes, or until the tomatoes are slightly mushy.

6. Add 1/4th tsp turmeric and 1 tsp red chili powder and Sauté until the spices are fragrant.

7. Put 1 tbsp pav bhaji masala and cook for 2-3 minutes with water.

8. Add 100gms cubed paneer and simmer until the butter oozes out of the mixture.

9. Then, add 2 cups of boiled rice, toss everything together, and heat until the rice is cooked and nicely coated with the masala.

10. Garnish with coriander and drizzle with a few drops of lemon juice, mix, and remove from the heat.

Ingredients
  

  • 2 tbsp Ghee
  • ½ tsp Cumin
  • 1 Onion (large)  Finely chopped
  • 1 tsp Ginger Grated
  • 1 tsp Garlic Grated  Finely chopped
  • 6-8 6-8 Beans   Finely chopped
  • 1 Carrot(medium)   Finely chopped
  • 1 Capsicum (small)   Finely chopped
  • ¼ cup Peas
  • 2 Tomatoes (medium)  Finely chopped
  • ¼ cup Sweet corn
  • 2 Boiled potatoes (medium)  sliced
  • 100 gms Paneer
  • 1 tsp Red chili powder
  • ¼ tsp Turmeric
  • 1 tbsp Pav bhaji masala
  • 2 cups Boiled rice
  • few strands  Coriander  finely chopped

Instructions
 

  • Heat the ghee in a tawa or pan and add the cumin, allow it to sizzle.
  • Now, add the chopped onion and caramelize it for a minute.
  • Add the grated ginger and garlic and sauté until the raw scent is gone.
  • Then add the diced beans, carrots, capsicum, and peas, close the lid, and simmer for 5 minutes, or until the vegetables are cooked perfectly.
  • Now, add the chopped tomatoes, sweet corn, and boiled potatoes and cook for a further 2 minutes, or until the tomatoes are slightly mushy.
  • Add turmeric and red chili powder and Sauté until the spices are fragrant.
  • Put pav bhaji masalaand cook for 2-3 minutes with water.
  • Add the cubed paneer and simmer until the butter oozes out of the mixture.
  • Then, add the boiled rice, toss everything together, and heat until the rice is cooked and nicely coated with the masala.
